Soufflé Espresso Martini
2 oz Modica Cacao Espresso Martini Mix
2 oz vodka or NA spirit
coffee foam*

2 oz Modica Cacao Espresso Martini Mix
2 oz water
1 egg white
1/4 oz coffee concentrate
First, make the coffee foam. Shake ingredients with ice for 10 seconds. Strain ice and shake again without ice for 30 seconds for a reverse dry shake. Foam should be extra frothy. Pour coffee foam into a coupe glass with straight sides (it has to has straight sides for this technique to work!) until it reaches the top. Let it sit for 5 minutes so the foam can settle on the top and stiffen. When it’s almost done, shake the Espresso Martini mix and vodka with ice. Make a small hole in the middle of the foam and pour the espresso martini into the hole. Garnish with 3 coffee beans and enjoy!
